    Matcha from CiTea

Matcha tea has a bright green color and a mild 'green' taste. It is traditionally served during the Japanese tea ceremony and is also gaining popularity in the rest of the world due to its many health benefits.

Matcha tea is a green tea made from hand-picked leaves of 30-year-old tea plants. These Tencha leaves are the absolute pinnacle of Japanese tea. The sticks are removed by hand, leaving only the soft leaves. These leaves are steamed, dried and then ground into a fine powder. By grinding the leaves instead of soaking them in water, you get all the nutrients and antioxidants present in the leaves. When grinding the leaves, the grinding discs rotate so slowly that no heat is created, which means that only 30-40 grams of matcha can be made per grinding stone per hour.

The different ways to make matcha

Usucha is the most well-known form of matcha tea. This matcha preparation contains a medium caffeine content and is high in antioxidants. 2 grams of matcha powder and 80 ml of water are used for this.

Koicha is a matcha tea for advanced users. Koicha has an intense taste of umami, lots of caffeine and even more antioxidants. For this thicker form of matcha tea, 4 grams of matcha powder and 40 ml of water are used.

    Preparation of matcha tea

To prepare Japanese matcha, you need a matcha set. This set consists of a matcha bowl, bamboo measuring spoon, bamboo tea strainer and a matcha whisk.

Making matcha tea starts by preheating the matcha bowl. Fill the matcha bowl with hot water and empty it as soon as the outside of the bowl feels warm to the touch. After this, fill the bowl again with water that has a temperature of 75-80°C.

Sift the matcha powder over the cup with a fine sieve to prevent lumps in the bowl. Mix the matcha and water with the bamboo brush in a W or M motion. Continue whisking the tea quickly until a smooth, frothy consistency is achieved. The thicker form of matcha tea, Koicha, can be eaten with a spoon.

The health benefits of matcha tea

    1. Matcha tea is not only tasty, but is also very healthy. Matcha powder contains catechins, a powerful antioxidant that is known for producing collagen, which ensures healthy hair, nails and skin.
    2. Caffeine in matcha powder helps to increase your alertness and energy levels. Matcha provides a long-lasting energy boost without the usual side effects caused by coffee, for example.
    3. Matcha tea can help reduce inflammation and support the immune system.
    4. Due to its L-theanine content, an amino acid known for its calming effects, matcha tea can help reduce stress and anxiety.
    5. Thanks to the combination of caffeine and L-theanine, matcha can help improve concentration and memory.
